Quinoa and Pinto Bean Mash

Does anyone else ever find themselves having an "everything but the kitchen sink for dinner" moment? I do. All the time. I generally like to shop for ingredients that I know I'll be using in a recipe, but sometimes there are extra things left in the cupboard and fridge that were purchased with no meal in mind. Random bits and pieces that need something extra to help them form a meal of some kind. That's what happened with this recipe. We hadn't gone grocery shopping in a while and I found myself looking at an assortment of random things that didn't go well together (according to Nate). So I accepted the challenge! And you know what? In the end it was delicious.

What you'll need:
-1 1/2 cups of quinoa
-1 can of pinto beans
-1/3 cup ginger mandarin dressing
-2 cups baby spinach
-A splash or two of olive oil
-4 cloves of garlic, chopped
-1/2 red onion, chopped
-A few pinches of chili powder
-A few pinches of garlic powder

1. Cook the quinoa. If you've never cooked quinoa, there are tons of great resources online about how to do so, like this one and this one. It's very simple and in the end you want it to be light and fluffy.
2. In a wok or frying pan, splash a bit of olive oil. Add the garlic and onion and cook for about 5 min.
3. Add the pinto beans and quinoa to the pan and mix everything together.
4. After a few minutes, add the spinach and mix it in.
5. When you start to notice that the spinach has begun to wilt and everything looks mostly cooked, add the dressing, chili powder, and garlic powder. Mix it all in.
6. When everything is cooked to your preference, remove from heat and enjoy!
