Coconut Cacao Granola Bars

I've been wanting to make granola bars for a while now but I had a hard time choosing a recipe! There are so many healthy granola bar recipes floating around the internet. Two Peas and Their Pod is one of my favorite resources for small, easy snack recipes. I decided to choose one of their granola bar recipes (you can find it here) and adapted it to use the ingredients I had. I have to say, the result was delicious! But it was super crumbly so I ended up with only six bars and the rest turned into really good granola- a perfect yogurt topping! I think, because I'm impatient, that I cut into the bars too soon. My advice would be to wait until they've cooled completely before cutting and maybe also heed caution when adapting recipes! ;)

What you'll need:
-4 cups oats
-1/4 cup flour
-1/2 cup shredded coconut
-1/2 teaspoon kosher salt
-1/2 cup coconut oil, melted
-1/2 cup honey (I used slightly less than this which could also be why mine were crumbly)
-2 tablespoons SunButter
-1/2 teaspoon vanilla
-A pinch of cinnamon
-A pinch of nutmeg
-A few sprinkles of chia seeds
-A few (generous!) sprinkles of cacao nibs

1. Preheat oven to 325 degrees. Line an 8x8 pan with parchment paper. Note- the original recipe says to use a 9x13 pan. Perhaps this is another reason why I ended up with more granola than bars?
2. Combine the oats, flour, coconut, salt, cinnamon, nutmeg, chia seeds, and cacao nibs in a bowl. Stir everything really well.
3. In another bowl, mix the coconut oil, honey, SunButter, and vanilla.
4. Pour the wet ingredients over the dry ones and mix well.
5. Pour into the pan and make sure to spread the granola out evenly. I pressed it down as well to really pack it in. Bake for 40-45 minutes. The granola should be a golden brown.
