Sunday Sweets: Mini Molasses Cookie Ice Cream Sandwiches

This week I was feeling a little tired and really just wanted a quick and easy sweet treat, so when I came across these soft molasses cookies, I knew they were the one. Does it get any better than homemade ice cream sandwiches? The slightly spicy molasses cookie with the creamy & comforting french vanilla...SO GOOD.
 (Disclaimer: the dough has to chill for 1 hour prior to baking. That was tough for me, "is this really neccessary" MAY or may not have gone through my head on repeat for 49 of those 60 agonizing minutes. Side note: Patience is NOT my strong suit. Like, at all. SO BEWARE YOU WILL HAVE TO WAIT...and WAIT and WAIT before that heavenly aroma fills your home.)

What you'll need:
- 1 c. butter, room temp
- 1/2 c. brown sugar
- 1 egg
- 3/4 c. molasses
- 3 c. flour
- 2 tsp baking soda
- 1/2 tsp cinnamon
- 1 tsp ground ginger
- Pinch of himalayan pink crystal salt
 ^ ( I added this salt because I am obsessed with it and have convinced myself I'm adding those SUPER neccesary minerals thus making cookies WAY more healthy...also salty and sweet is my absolute fave.)
- Vanilla ice cream

1. Cream softened butter, sugar and egg.
2. Add molasses and mix until well combined.
3. Mix dry ingredients.
4. Mix dry ingredients into molasses mixture and stir until fully incorporated.
5. Cover and let chill for 1 hour.
6. Preheat oven to 350* & grease cookie sheets.
7. Roll dough into walnut size balls and space cookies 2 inches apart on greased cookie sheets.
8. Bake for 8-10 min. Allow cookies to cool on baking sheet for 5 min before removing and cooling in the freezer for 20 min.
9. Add a scoop of vanilla ice cream to one cookie, top with another, press gently and chill in freezer for at least another 30min.
