Coconut Milk Chia Pudding

Coconut Milk Chia Pudding
I love chia pudding, and while there are a zillion recipes floating around on the internet, I figured that I would share one of my favorite ways to make it. I put chia seeds in and on everything anyway, so having it as the main ingredient is the best. Not to mention how easy it is! If you make it before going to bed it's ready for you when you wake up. And this recipe makes about 4 servings, so it will last a few days.

What you'll need:
-2 cups of coconut milk
-1/2 cup chia seeds
-1/4 cup shredded coconut
-2 tablespoons maple syrup
-1/4 cup cacao nibs
-Thawed frozen berries or fresh berries (for topping)

1. Add all the ingredients (except berries) to a bowl or mason jar and give it a good stir so it's all mixed. Leave covered in fridge overnight.
2. In the morning, take out of fridge. Scoop out the amount you want to eat into a different bowl, and top with fresh berries, or thawed frozen berries. If using frozen, I like to mash them up a bit with a fork before putting them on top. That's what I did for this recipe with frozen strawberries. Coconut Milk Chia Pudding
