Sunday Sweets: Chocolate Chip Black Raspberry Ice Cream Sandwiches

We are so loving coming up with these little ice cream sandwiches, almost as much as we are loving eating them! This week Alex requested that I make something with chocolate chip cookies because according to him "if it's not chocolate, it's really just a flavored biscuit."...
So chocolate chip it was! This recipe came from Martha. I prefer a little fruit, tang, or salt with my sweets so I decided to pair the cookies with black raspberry chocolate chip ice cream.

What you'll need:
-2 1/4 c. flour
-1/2 tsp baking soda
-1 c. unsalted butter, room temp
-1/2 c. sugar
-1 c. packed brown sugar
-1 tsp salt
-2 tsp vanilla
-2 eggs
-2 c. chocolate chips
-black raspberry chocolate chip ice cream

1. Preheat your oven to 350*.
2. In small bowl, sift flour and baking soda together, and set aside.
3. Cream your butter and your sugars in large bowl.
4. Add eggs, vanilla and salt to your sugar mixture and beat until well incorporated.
5. Add your flour & baking soda and mix until just combined.
6. Gently stir in chocolate chips.
7. Scoop tablespoon size portions onto greased cookie sheet.
8. Bake 8-10 min or until edges are just browning and middle is still soft.
9. Let slightly cool and remove from baking sheet.
10. Two options here - Either, let the cookies completely cool and then scoop ice cream on top and press, OR wait 5 minutes and scoop ice cream on top of your still warm cookie, press top cookie on gently and eat immediately. I chose the latter and YOU GUYS the warm chocolate chips and the cold, silky, black raspberry.....SO GOOD.
