

-1 beet, sliced and sauteed (this is enough for either two sandwiches, or for a leftover beet snack)
-A few kale leaves
-Herbed chèvre
-Seeded whole grain bread (or another bread of your choosing)
-Butter




1. Butter one side of a piece of bread and place butter side down in pan. I'm sure you've all made grilled cheese sandwiches before, so this probably isn't your first rodeo! Spread chèvre onto the side of the bread facing up.

2. Layer kale, then beets on top of the chèvre.


3. Spread chèvre onto one side of the other piece of bread. Place this on top of beets. Butter the side facing up.

4. Grill both sides of sandwich. Get excited, eat, then cry when it's over.
