Stuffed Pepper "Nachos"

Stuffed Pepper Nachos Per usual, I've been on the hunt for a healthy-ish snack for upcoming sports seasons, and was thinking about how I could make nachos into something healthy. This idea popped into my head while Nate and I were en route to the grocery store. Why not use peppers in place of the chips? I tried to explain it to Nate by saying "you know, kind of like stuffed peppers but using strips of peppers instead," and he didn't get it. And by "didn't get it" I mean that he was super skeptical and didn't think my plan would work. WELL it worked, and it was delicious!
Stuffed Pepper Nachos What you'll need:
-1 yellow pepper, cut into strips
-1 red pepper, cut into strips
-1 orange pepper, cut into strips
-3/4 cup diced green pepper (I used about half a pepper)
-1 cup white rice, cooked
-1/2 cup black beans, cooked
-1/2 cup corn
-Shredded cheese
-Guacamole and salsa for dipping
Stuffed Pepper Nachos Stuffed Pepper Nachos Stuffed Pepper Nachos Stuffed Pepper Nachos 1. Preheat oven to 350 degrees and line a baking sheet with tin foil.
2. Slice the peppers into strips. Place on baking sheet.
3. Mix together rice, beans, corn, and green pepper.
Stuffed Pepper Nachos 4. Using a regular size spoon, scoop out some of the rice mixture and place on each strip of pepper.
5. Sprinkle cheese on top (as much as you'd like!)
Stuffed Pepper Nachos Stuffed Pepper Nachos 6. Bake in the oven for 6-8 minutes, or until cheese has melted.
7. Serve with guacamole and salsa.
Stuffed Pepper Nachos Stuffed Pepper Nachos I should note that this really doesn't cook the peppers. They stay pretty crisp, which is what I wanted. You could probably cook them longer ahead of time, take them out and fill with the rice mixture and cheese, and then melt the cheese if you want them to be cooked. I prefer uncooked veggies AND I was going for a chip replacement, so fully cooked peppers were not my intention. Let me know if you try them or find a different variation! xx Courtney
