No Bake Chocolate Peanut Butter Bars No Bake Chocolate Peanut Butter BarsOver the weekend, Nate got a pretty bad injury playing football. There was a collision, he blacked out, got a concussion, and majorly messed up his back. It was so bad that he has barely been able to walk the past two days and has consistent back spasms. Luckily we have an amazing chiropractor (who also happens to be my boss and friend!) so he's definitely on the right track toward being back to himself soon, but it's been a rough couple of days. He always asks me to make him peanut butter chocolate chip cookies, so I decided to whip up something equally as delicious (but faster and easier!) for him yesterday. These are adapted from this recipe and are SO good!No Bake Chocolate Peanut Butter BarsWhat you'll need:
-3/4 cup ghee
-3/4 cup sugar
-1/2 cup almond milk
-2 teaspoons vanilla
-1 cup unsalted chunky peanut butter
-3 1/2 cups old fashioned oats
-1 cup chocolate chips

1. Melt the ghee in a saucepan over medium-low heat. After it melts, add the almond milk, sugar, vanilla, and peanut butter. Stir until mixed.
2. Turn the heat up to medium-high and bring to a boil. Continue to stir while boiling for 4 minutes.
3. Remove the pan from heat and add the oats. Stir to mix in. Set aside.
4. In another saucepan, melt the chocolate chips. I added a bit of milk to the pan too. Whisk consistently until completely melted.
5. Spread the peanut butter oat mixture onto the bottom of a lined pan. I used 8x8, but you could use any size depending on how thick you want the bars to be.
6. Pour the melted chocolate over the peanut butter mixture and spread evenly over the top. Place back in the fridge to cool.
8. Once it has cooled completely, cut into bars and enjoy!
