Sunday Sweets: PB & J Ice Cream Sandwich

Z requested that this week, for a special treat, we make peanut butter cookies with strawberry ice cream for a little pb&j dessert action. I found this super delicious recipe for peanut butter cookies and off we went! These were super simple to make, Z did most of the work! As soon as they were finished and he took a bite he looked a little shocked and said "THIS IS JUST LIKE A PEANUT BUTTER AND JELLY!" SUCCESS!

What you'll need:
-1/2 c. sugar
-1/2 c. packed brown sugar
-1/2 c. salted butter, room temp
-1/2 c. creamy salted peanut butter
-1 egg
-1 1/4 c. flour
-3/4 tsp baking soda
-1/2 tsp baking powder
-1/4 tsp salt
- strawberry ice cream

1. Preheat oven to 375*.
2. Beat butter until light and fluffy, about 2 min.
3. Add sugars and beat for another 2 min.
4. Add peanut butter & egg and mix well.
5. Mix your dry ingredients together and add to peanut butter mixture.
6. Stir together until well combined.
7. Chill in freezer for 20 min (if you can wait that long..)
8. Bake for 9-11 min, until corners are lightly brown.
9. Let throughly cool and add scoop of strawberry ice cream, press very lightly.
