
This meal is so incredibly simple that I almost didn't write a post about it, but Nate and I tend to eat a variation of this almost daily so I figured I'd go ahead and put it out there. I'm pretty sure I've mentioned before that I LOVE kale. It's a pretty serious affair we've got going on...I buy a new bunch every few days because it just doesn't last long. My favorite way to eat kale is sauteed either alone or with other veggies. Throw a few eggs into the mix and you've got yourself a hearty meal that will boost you with so much energy and happiness you won't know what to do with yourself!

What you'll need:
-3-4 cups of kale, coarsely chopped
-1 whole green pepper, chopped
-A handful or more Zima tomatoes, each cut in half (any kind of tomato will do)
-1 shallot, chopped
-2 cloves of garlic, minced
-A few pinches of cumin
-1/2 cup fresh basil, chopped
-4 eggs
-A spoonful or two of pesto

1. In a pan, saute the shallot, garlic, and pepper in olive oil. Sprinkle some cumin on top (because who doesn't love cumin?)

2. Add the tomatoes and basil and saute for a few more minutes. After a few minutes, add the kale on top.
3. While the veggies are cooking, begin to cook scrambled eggs in a separate pan.

4. After the eggs are done and the kale has begun to wilt, add the eggs to the pan with the veggies. Put a spoonful or two of pesto and mix everything together.
