Sunday Sweets: Chocolate Birthday Cake

So I saw this cake on pinterest and HAD to make it. It's so fun and whimsical I thought it would be perfect for one of Z's birthday cakes.

I used this marzipan recipe for the balls. I'm obsessed with them. They look like little felted balls to me and now I want to make a million cakes with all different themes all with marzipan balls on top!

I used this Chocolate cake recipe -except that I substituted applesauce for the oil. This is by far the best chocolate cake I've ever had. Super moist and fudgey and insanely chocolatey. AMAZING. For the frosting I followed what the directions suggested and threw some unsalted butter, sugar and cream cheese together with some confectioners sugar, vanilla, cocoa and a pinch of salt. You guys, I can't even. BEST FROSTING I've ever had. WHY HAS NO ONE BROUGHT CHOCOLATE CREAM CHEESE FROSTING TO MY ATTENTION BEFORE?! It is now my go to frosting for everything- cakes, cupcakes, Friday nights..JOKING....no, but seriously...

What you'll need:

Marzipan
- 10oz Almond flour
- 1/4 c. Water
- 3/4 c. sugar
- Natural food dye

1. Bring sugar and water to boil in small saucepan. Let boil, stirring constantly, until it reaches syrup consistency.
2. Let syrup cool, but not crystallize.
3. Pour syrup into almond flour and mix with hands 5-10 min until it is nice and smooth.
4. Place dough in plastic wrap and let cool.
5. Once cooled, break off into small pieces, add dye, and roll into balls.

Cake
- 2 c. plus 2 TBSP sugar
-1 3/4 c. flour
-3/4 c. plus 2 TBSP cocoa
-1 1/2 tsp baking powder
-1 1/2 tsp baking soda 
-1 1/2 tsp salt
-2 eggs
-1 c. milk
-1/2 c. applesauce
-1 TBSP vanilla
-3/4 c. plus 2 TBSP boiling water.

1. Preheat oven to 375. 
2. Whisk together dry ingredients in large bowl.
3. Whisk together eggs, milk, applesauce and vanilla in bowl.
4. Whisk egg mixture into dry mixture until combined. 
5. Whisk in boiling water until just mixed. Batter will be watery.
6. Pour batter into oiled and lightly floured cake pans.
7. Bake 25-30min until toothpick comes out clean.
8. Cool before frosting.

Frosting:
-cream Cheese (room temp)
-unsalted butter (room temp)
-confectioners Sugar
-cocoa
-vanilla
-pinch of salt

I didn't use a recipe for this...

1.Cream butter and cream cheese.
2. Add some sugar and mix until light and fluffy.
3. Add vanilla, pinch of salt and cocoa and beat on slow speed until well incorporated.
4. Add more sugar to taste and beat until it reaches desired consistency (about 3-5min).
