Potato Kale Casserole

When all else fails in the bitter cold days of Winter, my go to meal is to throw whatever ingredients I have in a casserole dish and bake it. Potatoes are my favorite cold weather food because they are so warming and comforting. And kale? Kale makes everything better.

What you'll need:
-About 2 cups of cubed potatoes (I used 3 red potatoes)
-About 2 cups chopped kale
-1 chopped tomato
-2 cups chopped broccoli
-5 garlic cloves, chopped
-Chopped fresh basil and parsley (I didn't measure, but the more fresh herbs the merrier!)
-1/4 cup extra virgin olive oil
-Curry powder
-Salt and Pepper

1. Preheat oven to 425*
2. After washing and preparing all of the vegetables, put them in a big bowl. Mix up the veggies, then slowly add the oil. I try to coat all of the veggies with the oil as best I can. I use my hands- it gets messy but it's fun!
3. Add salt, pepper, and curry powder. I don't measure- just go with what you think is best and then mix everything some more. 
4. Put a little bit of water in the bottom of the casserole dish and transfer the veggies from the bowl. You could probably mix everything in the casserole dish to begin with but I think it's easier to use a big bowl.
5. Cover the casserole dish and bake for about 35-45 minutes. I took it out halfway through to stir the veggies.
