Healthy 1st Birthday Cake (or Yummy Breakfast Muffins)

I was searching for a yummy, healthy cake I could give to Solla & Winter for their birthday. For me, giving a 1 year old processed sugar feels unnecessary and I am always searching for an alternative. I came across this healthy "smash" cake recipe and decided to go for it. IT WAS A HIT, with all of us. It's essentially a really simple, whole wheat muffin recipe. So while S & W got to indulge at their party, Z felt really fancy when he got to have this "cupcake" for breakfast, and I was happy knowing they weren't eating a bunch of empty calories and chemicals.

What you'll need:
-4 ripe bananas
-3/4 c. unsweetened natural applesauce
-1 tsp baking soda
-1 1/2 c. whole wheat flour
-3 tsp vanilla extract
-1 tsp. cinnamon

1. In a small bowl, smash your bananas. Preheat oven to 400*.
2. In a large bowl, mix dry ingredients together.
3. Add bananas, applesauce and vanilla to the dry mixture and stir until well incorporated.
4. Spray your muffin pan, or 9" cake pans with coconut oil or grease with butter and lightly flour.
5. Bake at 400* for 20 min.
