I originally planned to do a "cowgirl" type cookie for this ice cream sandwich recipe but halfway through baking I realized I was out of oats, so these turned out a tad bit different than I had thought but OH SO DELICIOUS.
I adapted this recipe from here.
What you'll need:
- 2 c. all purpose flour
- 1 c. whole wheat flour
- 4 1/2 tsp baking powder
- 1 tsp salt
- 2 sticks unsalted butter (room temp)
- 3/4 c. brown sugar (packed)
- 3/4 c. white sugar
- 2 large eggs
- 1 tsp vanilla extract
- 12 ounces chocolate chips
- 1 c. shredded coconut (generous)
- vanilla ice cream
1. Preheat oven to 350*
2. Sift together flours, baking powder, & salt, set aside.
3. Beat sugar & butter on high for 3 min, until light and fluffy.
4. Add eggs one at a time & beat on low.
5. Add vanilla extract.
6. While on low, add the dry mixture in slowly until just incorporated.
7. Stir in coconut & chocolate chips.
8. Scoop spoonfuls onto greased baking sheet.
9. Bake for 12-14 min.
10. Let cookies cool thoroughly & top a scoop of vanilla ice cream. Press second cookie on top.
