Blueberry WindsorDale Crackers

Blueberry WindsorDale CrackersThese crackers are easy to make, and they're so good! They aren't the healthiest choice but they do only have four ingredients and that's pretty awesome. I'd love to try making some with different kinds of cheese (and maybe in different shapes?) The opportunities are endless here. Anyway, if you want a quick and easy homemade snack, these are for you!Blueberry WindsorDale Crackers What you'll need:
-1 stick of butter
-About 7 oz. of cheese, grated (I used Blueberry WindsorDale because I had a package to use)
-1 cup flour
-A couple sprinkles of salt
Blueberry WindsorDale Crackers Blueberry WindsorDale Crackers 1. Cream the butter using an electric mixer until it's light and fluffy.
2. Beat in the cheese and mix until you have a crumbly mixture like the one pictured below.
Blueberry WindsorDale Crackers 3. Add the flour and salt. Use a spoon to mix it in. It will be dry and kind of hard to work with.
Blueberry WindsorDale Crackers Blueberry WindsorDale Crackers Blueberry WindsorDale Crackers 4. After mixing with the spoon, transfer to a lightly floured surface. Continue mixing and kneading with your hands until it's all combined into a ball of dough.
Blueberry WindsorDale Crackers 5. Separate the dough into two separate halves. Roll each half into logs about 1/2" thick. Put into the freezer for at least an hour, preferably two or three.
Blueberry WindsorDale Crackers 6. Preheat your oven to 375 degrees. Remove logs from the freezer and cut into rounds. I cut mine a bit thicker than I originally wanted, but really just use your best judgement depending on the kind of cracker you like.
7. Place rounds on cookie sheets and bake until they are golden (10-15 minutes). Transfer to a wire rack until cooled, then store in an airtight container.
Blueberry WindsorDale CrackersThese were super easy to make, and they're a wonderful snack! I ate a few warm ones topped with goat cheese and raspberries, but we've since been snacking on them with hummus. Delish! xx Courtney
