Coconut Nectarine Smoothie

Coconut Nectarine SmoothieCoconut Nectarine Smoothie This smoothie. Words almost can't describe how good it is! It's fruity and creamy and...oh, just the best. If you don't like nectarines, then this probably isn't for you. It is VERY strong on the nectarine. That being said, I plan to use this ratio more often with different fruits (plum? peach?) AND I would love to try this in popsicle form. I bet they would be amazing! It was a bit thick (I ate it with a spoon and it definitely looked like I was eating pea soup) so next time I'll probably thin it a bit. Regardless, this is one of my new fruity favorites!  Coconut Nectarine SmoothieCoconut Nectarine SmoothieCoconut Nectarine Smoothie What you'll need:
-3 nectarines, sliced with the pits removed
-A handful or more greens (I used lettuce from our garden but I bet this would be delicious with spinach!)
- 3/4 cup of coconut milk

Our garden is producing more than we can eat at this point, so I've been scrambling to use everything as much as possible! I don't typically put lettuce in my smoothies because I prefer spinach or kale (or bok choy or arugula...lettuce loses out!) but we have more lettuce than I know what to do with, so in the smoothie it went. I'm definitely going to be canning and fermenting a lot when we get back from vacation, but luckily I was able to bring my blender to Peak's, so we get to have a ton of vacation smoothies using the greens I packed in the cooler! xx Courtney
