Quinoa Lasagna

Quinoa LasagnaWhat you'll need:
-1 cup uncooked quinoa
-1 red pepper, chopped (in chunks- not too small)
-1 green pepper, chopped (in chunks- not too small)
-1 yellow pepper, chopped (in chunks- not too small)
-4 cloves garlic, chopped
-A few handfuls of kale, chopped
-1 pound ground beef
-2 cups tomato sauce
-A few sprinkles of shredded cheese
-Parmesan cheese (for topping)Quinoa LasagnaQuinoa LasagnaQuinoa LasagnaQuinoa LasagnaQuinoa Lasagna1. Pre-heat oven to 350 degrees. In a skillet, heat some olive oil over medium heat. Put ground beef in and start to cook.
2. In a pot, cook the quinoa. When I make quinoa, I bring 2 cups of water and quinoa to a boil, then I cover the pot and turn the heat down to low and let simmer for about 20 minutes. I usually sprinkle some salt, pepper, and other spices in too just for fun! I think I used cumin for this quinoa.
3. Going back to the skillet, add the peppers, and garlic. Stir occasionally and let cook for about 10 minutes.Quinoa Lasagna4. Add kale to the meat and veggie mix. After about 5 minutes, add the tomato sauce and mix everything together well.

Quinoa LasagnaQuinoa Lasagna5. In a casserole dish or pan, layer the bottom with the meat and veggie mixture. Sprinkle some cheddar cheese on top. Layer quinoa on top of that. Then repeat by layering the rest of the meat and veggie mix, then the rest of the quinoa. Sprinkle some more shredded cheese and some parmesan on top.Quinoa Lasagna6. Bake in the oven for 10 minutes. Remove from oven and let cool for a few minutes before serving (it'll be super hot!)
