I had been craving chicken salad for a while, but Nate and I just never got around to making it. One night I came home from work and decided to just GO FOR IT! Nate had grilled a bunch of chicken, so I took some of that and used other random ingredients (raspberries? Yeah, I did that) to make the most delicious chicken salad. Also, I made this at night so please excuse the photo quality! What you'll need:
-2 grilled chicken breasts, cut/torn into pieces (about a cup and a half)
-1/2 cup mayo
-1/4 cup raspberries, cut into quarters
-A handful of baby spinach, chopped
-Chopped almonds (I would estimate that I used about 15 almonds, cut into smaller pieces)
-5 to 10 sprinkles of tarragon
-Pepper to taste
-Spinach or other greens (to serve the chicken salad on)
1. Cut/tear apart two grilled chicken breasts into smaller pieces. Put in a bowl.
2. Mix in about 1/2 a cup of mayo. I measured out 1/2 a cup, but didn't end up using all of it.
3. Mix in raspberries, chopped spinach, and almonds.
4. After mixing everything together, sprinkle tarragon and mix it in. I really love tarragon, so I think I ended up "sprinkling" the little spice bottle about 7 or 8 times. Just get wild with the tarragon!5. Serve on a bed of greens (we had more spinach to use.) I sprinkled some pepper on top of mine too!This recipe seems so random to me, but it was delicious! I really liked the taste of fresh raspberries in the chicken salad, so I think that'll be something I do from now on. xx Courtney
