"Cookies & Cream" Smoothie

Cookies nd Cream Smoothie This recipe is inspired by one of my favorite smoothie spots. If you're local, you should definitely head over to Good Karma Cafe. They have the best smoothies around, and I love their version of this smoothie (their other menu items are amazing too!) Not to mention, the atmosphere is super relaxing and inviting- wonderful happy vibes all around! Cookies and Cream Smoothie What you'll need:
-1 frozen banana
-1/2 cup baby spinach
-Young coconut meat (from half of a young coconut)
-1/2 cup coconut water
-2 tablespoons coconut milk
-A drop or two of vanilla
-A few pinches of cacao nibs (or more if you're feelin' crazy!)Cookies and Cream Smoothie Cookies and Cream Smoothie Cookies and Cream Smoothie Cookies and Cream Smoothie Young coconuts are SO good. To start this recipe, I opened the top of the coconut by cutting a small square at the top. I then poured the water into a glass (you'll need an 8-10oz glass because they have quite a bit of water in them!) Since the smoothie doesn't require all of the water, you can store the rest in the fridge. It might take a few whacks with the knife to get through, but it's so worth it once you open it up! I would also suggest using a sharper/heavy duty knife. Nate had to eventually help me finish cutting into this one because it just wasn't opening! The gloriously wonderful coconut meat will be on the inside of each half, and you can use a spoon to scrape it out. The hardest part is to not eat it all before making the smoothie! You only need half of the meat for the smoothie, so feel free to save the rest in the fridge or eat it by itself. Cookies and Cream Smoothie Cookies and Cream Smoothie Cookies and Cream Smoothie For the smoothie, I blended the spinach, coconut milk, and coconut water first. Then I added the coconut meat and blended for about another 20 seconds. I added the rest of the ingredients after that and blended for another 10-30 seconds. I'm awful at timing myself for accurate recipe instructions, so trust your own judgement and blend it to your liking! Cookies and Cream Smoothie This is really filling and oh so delicious.
